Creamy Vegan Tomato Pasta Sauce

Another one that kids absolutely love! Tested many times on my 9 year old sister!

Enough cooked pasta for 4 people
1 TBSP olive oil
Jar of tomato purée (around 400ml)
Container of Tofutti’s Better than Cream cheese (one or 2 depending on how creamy you want it)
100g mushrooms
half an onion
half punnet Cherry tomatoes (Or baby Romas) sliced in half
100g spinach
italian herbs to taste

Heat up a large saucepan with the oil. Once hot add the onion and cook until see-through and tender.

Add the mushrooms and tomatoes and cook until tender. Add the tomato purée and simmer on medium heat. Slowly add the herbs to your tasting.

Add the Cream cheese to taste and stir through thoroughly.
Stir through the spinach and Serve!
